Best Black Bean Burgers PLUS

My Mister invented this veggie burger after trying out at least a dozen black bean burger recipes from a wide range of sources and still coming up short of absolute satisfaction.



I am not sure what inspired him to add sweet corn and carrot, but these additions elevate this burger to oooo la la for flavor and crunch! Then he solved the difficult issue of the veggie patty holding together well by

A: letting the patties rest after being formed and then

B: cooking the patties on the stove in a grilling pan rather than directly on a grill.

Paired with a spicy chipotle mayo, a toasted brioche bun, and other condiments, this veggie burger will please even the carnivores in the family.


Make sure your main ingredient, the black beans, are of excellent quality. We love this brand:


Ingredients:

2 cans black beans

1 cup sweet onion finely diced

3 cloves garlic, minced

3 eggs


Make a spice mixture that consists of:

1 cup plain unseasoned bread crumbs

1 1/2 teaspoons cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon paprika


1 cup carrots diced into small dice

1 cup sweet corn, fresh or frozen

3 Tablespoons flat leaf parsley, chopped fine

1 cup shredded sharp cheddar (or whatever cheese you want)



Mash beans with potato masher until they appear to be half mashed, yet half still whole. Watch closely for a perfect mix.



Beat eggs until well blended. Add to beans with all other ingredients. You might want to wear vinyl gloves for this. Mix well by hand.


Make into 4” burgers about 1/2 inch thick. Makes 8 burgers.



Cover the burgers with plastic wrap. Let the raw burgers rest in the fridge for a couple hours for the flavors to meld and the burgers to bind.


Pan sauté in a grilling pan coated with olive oil and a bit of butter for 6 minutes per side at medium heat.



These can be grilled but tend to fall apart on the grill. Make sure the grill is well greased if you do choose to grill these.


Serve on a fabulous bun. We love a brioche burger bun with sesame seeds. We toast them until lightly browned just before serving.



Pile high with condiments. We make a spicy mayo with mayonnaise and chipotle sauce and it is insanely delicious on these, an essential topping. DO NOT BUY THE PRE-MADE STORE BRAND CHIPOTLE MAYO: UGH!! Make it yourself with premium mayo and real chipotle exactly to taste!


Never underestimate the taste and texture of a crispy green lettuce, sweet or dill pickles, slices of tomatoes in season, mashed avocado, a variety of mustards.


This will be your favorite black bean burger!!!


Oh, I would be remiss if I didn’t add that a perfect potato chip Is also required! Choose your own!
